While industrial standards prioritize speed for profit, we focus entirely on quality. We invest 10 to 14 days dry aging the entire carcass to deliver unmatched flavor and tenderness in every cut. See below for the science behind our process.

Day 1–3

Surface Pellicle Forms

In our climate controlled aging room, a bark like crust forms over the surface as a natural moisture barrier that shields the meat while slow evaporation begins. This is a purely structural phase with no flavor change yet, just the foundation for everything that follows.

Day 4–7

Tenderizing Begins

The meat’s own natural enzymes, calpains and cathepsins, get to work breaking down tough muscle fibers from the inside out. Fat oxidation starts to build depth, delivering the first real flavor impact and a noticeably more tender bite.

Day 8–14

Full Flavor Development

The “sweet spot.” Enzymes finish their natural tenderization while moisture keeps evaporating, concentrating the meat’s savory “umami” punch. The result: a deeper, richer, more intense beef flavor that fresh packed beef simply can’t match.

When can I expect delivery after placing my order?

Once your order is placed, our team will update you on its status within one business day, Monday through Friday.
To ensure your order arrives safely below 40°F, we use 2 day delivery and only ship Monday through Wednesday to avoid weekend warehouse delays. What to expect after ordering:

  • Status Updates: Sent within 1 business day (Mon–Fri).
  • Dry Aged Beef: Fulfilled within 24 hours and shipped during our Mon–Wed window.
  • Dry Aging Beef: If your selection is still aging, we will email you an estimated fulfillment date (maximum 10 days).
Do I need to be home for delivery, and how should I store the meat?

Yes, please ensure someone is home on delivery day to place the packages straight into the freezer. You can store your meat in either a standard kitchen freezer or a chest freezer.

Does the meat arrive frozen or refrigerated?

Depending on the seasonal weather, your meat may arrive partially frozen or safely chilled below 40°F. We rigorously test our packaging in extreme heat to guarantee your order stays perfectly temperature controlled for up to three days, well within food safety guidelines.

Will the meat bundle fit in my freezer?

We offer many different variety packages to fit your family and freezer space, falling into either 35 lb or 20 lb sizes. Our largest option is the "Butcher's Cut 1/8th Beef Bundle" at 35 lb which takes up roughly 1 to 1.5 cubic feet of space, fitting comfortably in a standard refrigerator freezer. All of our other unique variety bundles are packed at a convenient 20 lb size, requiring less than 1 cubic foot of space.
